RoyceC Posted June 11, 2011 Report Share Posted June 11, 2011 Saw this in a magazine...tried it...was pleasantly surprised... 5-7 med Beets (to make 1 1/2 cups pureed) 2 cups flour, 1 1/2 tsp baking soda, 1/2 tsp baking powder, 1/4 tsp salt, 3/4 cup cocoa powder, 1/4 cup oil, 1/2 cup applesauce, 1/2 cup brwn sugar, 1 cup sugar, 1tsp vanilla extract, 3 eggs 3/4 cup choc chips.... Frosting. Cook Beets until tender...cool, peel, quarter and puree in blender. Prep 24 cupcake tins with paper liners. combine flour, bakng soda, baking powder salt and cocoa,set aside. mix together.. oilo,applesauce,both sugars and vanilla...add eggs one at a time until blended. add beet puree and mix well. gradually add flour mixture and fold in choc chips. Pour batter into tins and bake at 350* for 15-50 min. When cupcakes are cool, top with frosting and enjoy. Quote Link to comment Share on other sites More sharing options...
