Mary
Fried Tofu - it sounds awful but its great! Get a packet of firm tofu - slice int in 3 sections and press. I use a towel and books. Wait an hour or so, then cut the tofu sections up into small squares. Place in a large bowl and add 2 tablespoons soy sauce, a pinch of ginger, 3 tablespoons of vinegar ( or any other marinade you prefer). Toss tofu for an hour or so - or putt in frig over night. When ready to cook it - place 2 tablespoons olive oil in a large skillet, heat the oil over medium heat and add the tofu. Cook for 4 to 6 minutes, turning occasionally, until golden brown and lightly crispy. My sister in law is a vegan and she turned me on to this - its great and healthy! Tilly
Thank you Mary. Unfortuntely I didn't end up needing idea's to make a meal for someone who was vegetarian after all which was why I requested idea's but I may try the suggestion another time as I quite often like meat free options.
