Cleopatra Posted March 3, 2012 Author Report Share Posted March 3, 2012 A basic and easy recipe for jugged hare. Ingredients 1 hare Mixed herbs 2 onions 6 cloves 6 whole allspice Lemon Peel ½ tsp black pepper Flour 2 tbs Worcester Sauce Knob of Butter Splash of port wine Method 1. Wash and joint the hare. 2. Add some flour to a bowl and coat the pieces of hare in the flour. 3. Put the hare into a large lidded saucepan. 4. Add the herbs, onions, cloves, allspice, lemon peel and pepper. 5. Fill the pan with water until the meat is covered and simmer until tender. 6. Remove the hare from the pot and keep warm. 7. Thicken the remaining juices with flour and a little butter to make a gravy and add the Worcester sauce and port wine. 8. Boil the gravy for around 10 minutes.
