Referring to him/her as a them implies a split personality. Referring to him/her as their implies something belonging to them.

perhaps the correct term would be "OI YOU".

They have hours of training at keeping a straight face and special sound proofed rooms they can go after the interview to laugh as loud as they want without disturbing the rest of the building.🤣

P.S. how do they manage in public facilities, does he/she/oi you, use the male toilets or the female toilets?
